Coconut Chicken Curry RecipeClose

What you'll need

  • Oil
  • Onion
  • Sweet Potato
  • Chicken
  • Coconut Milk
  • Water
  • Rice


  1. Heat oil in a large pan on medium heat and cook onion and sweet potato for 3 minutes until onion is softened. Remove from pan and set aside.
  2. Turn heat to high, add chicken and cook until brown.
  3. Return onion and sweet potato to the pan. Add coconut milk, water and Recipe Base then stir through.
  4. Simmer with the lid on for 15 minutes.
  5. Remove the lid and simmer for a further 5 minutes or until sauce has thickened and sweet potatoes are cooked.
  6. Serve with rice.
